Muffins with Fruit in Them

Banana Muffins

Ingredients:

  • 2 cups whole wheat pastry flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 2 egg whites
  • 1/2 cup honey
  • 2 tablespoons safflower oil
  • 1/4 cup milk (non-fat) or almond milk, or soy milk
  • 1/4 cup apple sauce (unsweetened)
  • 2 ripe banana – smooshed with a fork
  • Nuts (optional – for sprinkling on top)

Directions:

  1. Preheat oven to 350 degrees F.
  2. Note: I used a 12 muffin tin. If you don’t have muffin paper, spray the tin with olive oil so the muffins don’t stick.
  3. Mix all ingredients in a large bowl using an electric mixer. Make sure all ingredients get really well blended together.
  4. Pour the batter into the muffin tin or muffin papers. Fill only half way.
  5. Sprinkle nuts of your choice over the top and place in oven (Optional).
  6. Bake for 20 minutes or until cooked through.

Chocolate Chip Muffins

Ingredients:

  • 2 cups whole wheat pastry flour
  • 2 teaspoons baking soda
  • 1 egg
  • 1/2 cup honey
  • 1/4 cup avocado oil (olive oil or safflower oil will also work)
  • 3/4 cup unsweetened soy milk (or milk of preference)
  • 2 teaspoons ground cinnamon
  • 1/2 cup unsweetened apple sauce
  • 1 cup grain sweetened chocolate chips

Directions:

  1. Preheat oven to 350 degrees F.
  2. Line your muffin tin with cupcake papers.
  3. In a medium mixing bowl, whisk together the flour, chocolate chips and baking soda.
  4. In a large mixing bowl, blend everything else with a whisk.
  5. Add the flour to the wet ingredients and whisk again.
  6. Pour into your muffin tin. Fill up the cups only half way.
  7. Bake for 20 minutes or until a toothpick poked in the middle of a muffin comes out clean.

Fruit Muffins


Ingredients:

  • 2 cups whole wheat pastry flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 whole egg
  • 1 egg white
  • 1/4 cup safflower oil
  • 1 cup apple concentrate, no sugar added
  • 1 cup milk (any kind you use will be fine, I used unsweetened almond milk)
  • 3 teaspoons vanilla extract
  • 1/2 cup unsweetened apple sauce
  • 3 cups fresh strawberries, chopped

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl, combine the flour, baking soda, cinnamon and fresh strawberries. Set aside. (You want to coat the strawberries with flour so they don’t sink to the bottom of your muffins while baking)
  3. In a medium mixing bowl, whisk together the eggs, oil, apple concentrate, milk, vanilla, and apple sauce.
  4. Pour the liquid into the flour and stir with a wooden spoon until well combined.
  5. Spoon into muffin tins or papers and bake for approximately 15-20 minutes, or until a toothpick inserted in the middle of a muffin pulls out clean.
  6. Allow to cool completely. These are not like other muffins where they taste best out of the oven. These truly do taste their best when they are completely cooled.

Cinnamon Apple Muffins


Ingredients:

  • 2 cups whole wheat pastry flour
  • 2 teaspoons baking soda
  • 2 egg whites
  • 1/2 cup honey
  • 1/4 cup safflower oil
  • 3/4 cup milk of choice (almond, soy, rice, or cow)
  • 1/2 cup unsweetened apple sauce
  • 1 medium apple, peeled and well chopped
  • 2 teaspoons cinnamon

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a medium mixing bowl, blend together the flour, cinnamon, chopped apples and baking soda.
  3. In a large mixing bowl, whisk together the egg whites, honey, oil, milk, and apple sauce.
  4. Pour the flour into the liquid and blend well.
  5. Spoon into lined muffin tins and place in the oven.
  6. Bake for 15-20 minutes or until the muffins are cooked through (test with a cake tester).
  7. Cool on a cooling rack (the apples retain the heat for a while, so allow enough time for cooling).
