Fondue

Cheese Fondue
Apple Juice
Gruyere Cheese
Emmentaler Swiss Cheese
Soft Mozzarella (opt.)
1 crushed garlic clove
1/2 tsp salt
1/2 tsp pepper
cornstarch
french bread
italian sausage sauteed in onions (opt)

Toss grated cheese in 1 TB cornstarch. Put 1/4 cup of apple juice in a pot and bring to a simmer (not boiling) add 1/2 cup cheese, stir until melted, add another 1/2 cup cheese and stir until melted. Depending on how much fondue you want to have, alternate adding apple juice and cheese. Add more cheese or apple juice to consistency. A good ratio is 1 cup apple juice, 4 cups cheese.  Add in spices. The mozzarella makes it go farther is cheaper. Chop up your french bread and leave it over night. Stale bread is better because it gets soft with the cheese. Italian sausage is also good dipped in cheese.
