Peanut Brittle
Ingredients:
2 cups sugar
1 cup light corn syrup
½ cup water
½ cup butter or margarine
2 ½ cups raw peanuts
1 ½ tsp. baking soda, sifted
Instructions:
Butter the sides of a heavy 3-quart saucepan. In it combine sugar, corn syrup, water, and butter or margarine. Cook and stir over medium-high heat till sugar dissolves and mixture comes to boiling. Cook, over medium-low heat, stirring occasionally, to 275° (soft cracked stage) and till syrup turns a golden color (mixture should boil gently over entire surface). Add nuts and continue cooking, sitting often, to 295° and till syrup is a clear golden color. Remove from heat. Quickly stir unsifted soda. Immediately pour hot mixture onto two buttered large baking sheets. If desired, use two forks to life and pull candy to stretch it thin. Cool; break into pieces. Makes about 2 1/3 pounds.
